Mini Christmas Puddings

Ingredients

1x Fruit cake (home brand or the like)

1x Orange juice concentrate (1 2L mix) -> You’ll only use PART of this (maybe half?) so go easy when adding this.

Smidge of Rum/Scotch/Marsala something similar

white chocolate drops

red and green glace cherries

STEPS

Crumble the fruit cake into a large bowl. Break it down as much as possible.

Add alcohol if desired (this recipe ISN’T cooked, so don’t add this if you’re serving to kids).

Slowly add the orange juice concentrate, mixing it in as you go (you won’t need the whole container, and you DON’T want it runny/too much juice!). The consistancy you want is wet enough to join the cake back together again, but not so wet that it’s really sticky on your hands…Make sure you mix it up well with a fork so that everything’s covered. Feel free to use your hands.

Using a teaspoon, spoon out some of the mixture and roll into a small ball.

Lay the Christmas puddings out onto a tray. Cool in the fridge to make them harder.

Melt the white chocolate and cut up the glace cherries into quarters (possibly less- depends on what you like).

Using the back of a teaspoon, take some white chocolate and dab it onto the top of a christmas pudding. Add a green and red cherry bit to the top (so that the cherry sticks on to the white chocolate).

Chill again and serve!
