Healthy Banana Muffins

Ingredients

  • 30g Coconut Oil (melted)
  • 60g Clear Honey
  • 1/2 tsp Vanilla Extract
  • 6-8 Small-Medium, Very Ripe Bananas
  • 150 Wholemeal Flour
  • 1 Heaped tsp Baking Power
  • 1/2 tsp Bicarb
  • 1/2 tsp Cinnamon
  • Pinch of Salt
  • 1/2 cup rolled oats

Method

Mix it up, stick it in 12 muffin cups and cook it for 25 minus at 190 deg.

Seriously, These muffins were quite yummy, and simple to make. They use a LOT of banana, and are really moist, this wasn’t in the original recipe though, so if you want to add less (say 2?) then by all means, go ahead, it should still taste good! You will notice that this uses coconut oil, because lately I’ve been researching the benefits of coconut oil. The internet seems to have mixed feelings about it, but I figure it can’t be any worse for me then butter, and that’s exactly what would be going in there if I wasn’t using the coconut oil.

Also, the oats were an extra thing as well. If you’re going to use less banana, then just keep an eye on the consistency of the mix- the oats might change it a bit.

What A Weekend!

Phew. The long weekend is over. It was SO enjoyable, and JAM PACKED full of awesomeness. This post is just some photos of the weekend gone by. Some photos are just iPhone pics, but others are ones I’ve tried to do well.

Chocolate Brownie Pudding…

We all have great recipes that we love. But this one, is amazing! It was a bit of an accident really. My brother Hayden and I were making it, and we didn’t have one of the ingredients. We made it anyway, and it ended up being the most amazing melt in your mouth, chocolate brownie pudding EVER! The first time I made it I cut up one banana, and just stuck them into the mix just before the sauce goes on. They melt and it is just DEVINE!

Ingredients

1/2 cup SR flour

1/3 cup sugar

1 egg

1/3 cup brown sugar

40g Dark Chocolate

50g Butter

1/2 cup milk

1/3 cup cocoa

1/3 cup brown sugar

3/4 cup water

40g Butter

Steps

1. Melt chocolate, butter, milk and 1/2 the cocoa. Put to the side.

2. Mix egg into chocolate mixture.

3. Put flour & white sugar into the baking dish you want to use to cook in.

4. Add chocolate mixture and mix.

5. Self saucing sauce: Mix 1/2 the cocoa, borwn sugar, water and butter and melt. Pour over the top of the other mixture.

6. Cook in the over for 25 minutes on 180ÂșC. Pudding should be hard on the top, soft in the middle, and a sauce on the bottom.
