Peppermint Brownies

Ingredients

180g Butter

150g Dark Cooking Chocolate

1 3/4 cups caster sugar

4 eggs

vanilla essence

3/4 cup plain flour

1/3 cup cocoa powder

1 tsp Peppermint essence

STEPS

Preheat oven to 160ºC. Grease lamington pan and line with baking paper.

Combine butter and chocolate in a saucepan. Stir over low heat until melted and smooth. Add peppermint essence.

Add eggs, essence, flour, cocoa and lastly sugar. Mix quickly.

Pour into prepared tin and bake for 50 minutes or until firm.

Things to remember:

When it’s ready, and you stick the skewer into it, it will stil come out a bit sticky- this is GOOD.

1 tsp of Peppermint essence might taste pepperminty in the batter, but once it’s cooked it will be quite faint. If you really like the peppermint flavour, then make sure you add a bit more.

Chocolate Brownie Pudding…

We all have great recipes that we love. But this one, is amazing! It was a bit of an accident really. My brother Hayden and I were making it, and we didn’t have one of the ingredients. We made it anyway, and it ended up being the most amazing melt in your mouth, chocolate brownie pudding EVER! The first time I made it I cut up one banana, and just stuck them into the mix just before the sauce goes on. They melt and it is just DEVINE!

Melting Chocolate Brownie Pudding!

Ingredients

1/2 cup SR flour

1/3 cup sugar

1 egg

1/3 cup brown sugar

40g Dark Chocolate

50g Butter

1/2 cup milk

1/3 cup cocoa

1/3 cup brown sugar

3/4 cup water

40g Butter

Steps

1. Melt chocolate, butter, milk and 1/2 the cocoa. Put to the side.

2. Mix egg into chocolate mixture.

3. Put flour & white sugar into the baking dish you want to use to cook in.

4. Add chocolate mixture and mix.

5. Self saucing sauce: Mix 1/2 the cocoa, borwn sugar, water and butter and melt. Pour over the top of the other mixture.

6. Cook in the over for 25 minutes on 180ºC. Pudding should be hard on the top, soft in the middle, and a sauce on the bottom.

Lucky Me…

“I have to celebrate you baby,
I have to praise you like I should”

This is how I felt this weekend. Celebrated by my husband, and family. It’s a nice feeling. :-) Friday was a day of getting presents from my kids and watching Toy Story. Fun times. Piper and her mum gave me an awesome Fraggle Rock T-shirt. Very cool, and I have worn it now ever since I got it! Chocolates, some jewlery, elephants and other nick-nacks were the order of the day. I felt SO special, and almost (I said almost) wish that I didn’t have to leave.

Saturday was also lots of fun. After a bit of a sleep-in Luke fixed up my iTunes, and then we went to the shops. I got an iPhone! and some new underware. Plus we bought some yummies for lunch.

After playing with my iPhone for ages Rhys came over and we drunk wine and champagne and ate a yummy salad, and some other yummy things like chocolate. :-)

Then we eventually got ready and went down to Brissie for Faith’s birthday party @ The Brew House. Fun night- beer, pizza and some arcade games next door. :-)
