Swedish Chicken Ceasar Salad

I’m one of those lucky women who’s husband eats salads with her. We had this one the other night, and boy of boy were we happy with it!
I will just say before I start that we didn’t stick to Jamie Oliver’s version very religiously. I used some things that we had in the fridge/pantry already to save time and money. I will be trying this recipe properly at some stage, most probably whenever I can get my hands on quail eggs. :-S
I’m going to give you the instructions for my version, and if you want to see Jamie’s version then you can pick up his cookbook “Jamie Does…”. I highly recommend it.
Serves 2
2 tsp fennel seeds
Sea salt and pepper
Olive oil
1/4 roast chicken from the supermarket (JO version: 4x150g boneless chicken breast)
2 eggs (JO version: 12 quails eggs)
200g sourdough (JO version: Sweedish rye bread)
4 handfuls of mixed leaves.
Parmesan cheese
(JO version also included: bacon and cress
DRESSING:
100g sour cream
Juice of 1/2 lemon
Splash white wine vinegar
4 anchovy fillets
Fresh dill
Preheat oven to 190ºC. Gently bash the fennel seeds in a pestle and mortar with a good pinch of salt and pepper. Drizzle olive oil in to make a paste.
Cut up the sourdough into chucks and rub with the fennel mix. Cook in the oven for 10-15 minutes, or until they’re crisp.
Boil the eggs for 2 1/2 minutes or so. Once they’re cooked put them in cold water, then peel and cut each egg into 6.
Put the sour cream, lemon, white wine vinegar, anchovies and a pinch of salt and pepper into a bowl. Process till smooth (JO says to put it into some sort of wizzer- I tried this, but there wasn’t really enough to ‘wiz’. Bashing with a fork did the job, and I imagine mixing it in the pestle and mortar would be just as effective). The sauce so far should taste a little bit salty and acidic. Finely chop your dill and add it slowly- checking that the taste is right.
Tear your remaining dill up and put it in with your salad leaves. Add your pulled apart chicken, and everything else. Add your shavings of parmesan cheese.

Another (short) era over…
So far this month things are happening well.
At the beginning of the week I finished my Graduate Certificate at the University of New South Wales, and signed up to be RPL’d for a certificate IV in Frontline Management with a connection from work. And I’m also enrolling in a Cert IV Trainer and Assessor. Even though my Bachelor of Learning Management permits me to be a registered teacher I’m not qualified in the VET sector- hence the TAA. What’s another qualification, hey?!
I’m feeling a bit under-whelmed with finishing Uni. I was expecting to get sick or something. You know, because I’d be relaxing, taking my eye off the ball etc. But no, no sickness. I’m not sure if it’s because I’ve just transfered my intensity into other areas of my life (example: work, sewing etc), and I’ve kept up that intensity etc., or if I just actually wasn’t that stressed when I was doing Uni.
I have a feeling it’s the second one, which makes me pretty proud.
Seeing as this is my blog, I will the take the opportunity to brag on myself, because I feel like no one has fully appreciated what the last semester has been like for me. I mean, I’ve been working full time, in a management position, and doing Uni every night after work until all hours of the night. This, coupled with cooking, cleaning (abeit, not much of that went on…), and a stack of social functions we couldnt miss (birthdays etc), I am pretty gosh darn proud of myself! I even had time to post on here, catch up on some blogs (apologies to everyone I’ve been unreading… I’m catching up- slowly!), AND I’ve stayed current with my Creative 365 journey!
Anyway, rant over.

Speaking of my Creative 365 journey…Do you ever pop round to have a look what I’m up too?
I’ve not only been doing the creative things each day, but I’ve been uploading them too! It’s a miracle! Well, maybe not particularly a miracle.. probably more to do with the fact that I have just finished Uni!
I’m feeling pretty proud of the things I’ve created. I would love to have pop round here and tell me what you think.
You might also remember our June Challenge? I’m pleased to say that we’re right on track with that too. We’ve had a few nights of toasted sandwiches, that would have normally been Thai nights, and quite a few lunches which consisted of just cup-a-soups, but we’ve survived! I’m getting more organised, which is a good thing, and tomorrow will be our first check in to see how much we’ve saved so far!
I’ll post up a bit of a summary of this week’s menu (We’ve been eating lots of Jamie Oliver recipes), and next week’s menu in the next few days. In the mean time, go have a look at what I’ve been up too!

I’ve just planned this week’s menu, and it is extra-yummy this week, so I thought I would share!
Mon: Sweet Potato Gnocchi
Tues: Beef Brisket, latkes, potato pancakes, apple sauce and sufganiyot (it’s a test run for Hanukka, and although we’re not Jewish or anything, Jesus celebrated Hanukka, and we’re join in!)
Wed: Mac & Cheese
Thurs: Fish & Chips
Fri: Turkey- Christmas Party
Sat: WW Soup
Sun: Toasted Sandwich
Mon: Indian- from JO cookbook or Dosas
Doesn’t it sound YUM!? Can’t wait!
