Menu Plan

Haven’t been very good with the menu plans- we’ve been out to dinner more times then I like to count in the last few weeks. Not that it hasn’t been nice… just not so good for the stomach.

So, here it is, this week in the Carbis household:

M: Creamy Mushroom Soup

T: Slow Cooked Tomato Soup

W: Pasta

Th: Chicken sald with chilli cream dressing

F: Risotto

S: Warm lentil, roast pumpkin and goats cheese salad

S: Ricotta & spinach chicken with polenta & tomatoes

Almond Bread

Ingredients

3 egg whites

1/2 cup castor sugar

1 cup plain flour

125g almonds

240 g glace cherries

Method

Beat egg whites until soft peaks form. Gradually beat in sugar, beating will after each addition, until all sugar is disolved. Fold in sifted flour, whole almonds, and cherries.

Spread into a 25cm x 8cm bar tin, lined with baking paper.

Cook in an oven for 30-35 mins (180ºC) or until just firm. Cool out of tin.

When cold, wrap in alfoil and put aside for one or two days. Using a very sharp knife, cut bread wafer thin and put the slices onto a baking tray. Bake in a SLOW oven for 45 mins, or until crisp (not too dark- just starting to colour).

Makes about 40.

Peppermint Brownies

Ingredients

180g Butter

150g Dark Cooking Chocolate

1 3/4 cups caster sugar

4 eggs

vanilla essence

3/4 cup plain flour

1/3 cup cocoa powder

1 tsp Peppermint essence

STEPS

Preheat oven to 160ºC. Grease lamington pan and line with baking paper.

Combine butter and chocolate in a saucepan. Stir over low heat until melted and smooth. Add peppermint essence.

Add eggs, essence, flour, cocoa and lastly sugar. Mix quickly.

Pour into prepared tin and bake for 50 minutes or until firm.

Things to remember:

When it’s ready, and you stick the skewer into it, it will stil come out a bit sticky- this is GOOD.

1 tsp of Peppermint essence might taste pepperminty in the batter, but once it’s cooked it will be quite faint. If you really like the peppermint flavour, then make sure you add a bit more.
